Apple-A-Day Smoothie Recipe

½ cup skim milk or could use a rice or almond milk
6 oz vanilla yogurt
1 tsp apple pie spice
1 medium apple, peeled and chopped
2 Tbsp cashew butter (MUFA)
Handful of ice
1. COMBINE milk, yogurt, apple pie spice, apple, cashew butter, and ice in blender.
2. BLEND for 1 minute, transfer to a glass, and eat with a spoon.
NUTRITION 472 cal, 19 g pro, 64 g carb, 5 g fiber, 50 g sugars, 18.5 g fat, 4.5 g sat fat, 296 mg sodium

Zucchini Pan Cakes Recipe


1 zucchini
1 large egg
1 green onion
2 ½ tables of olive oil
Salt and Peppe


Step 1

Grate the zucchini into a bowl. Chop the green onion. Now mix the grated zucchini and chopped onion in a bowl.
Step 2

Add egg to the mixture and mix thoroughly. Add salt and pepper
Step 3

Put 3 mounds of zucchini mixture into the pan and fry it by pressing down to flatten until lightly browned, then turn it and let the other side to be browned.

Paleo Hash Brown Slider Recipe


Hash Brown Pattie Ingredients
1 medium raw sweet potato, shredded
1/4 cup onion, shredded
1 egg, whisked
1 tbs coconut flour
Salt & pepper to taste
Any other seasonings of your choice
Other Ingredients
1/2 lb bacon, cooked (about 8-12 average slices)
3-4 eggs, fried or scrambled
Guacamole or avocado slices


Step One – Fry Bacon
Cook bacon strips, and set on paper towel to drain
Reserve bacon fat
Step Two – Cook Hashbrown Patties
In a mixing bowl combine shredded sweet potato, shredded onion, whisked egg, coconut flour, and salt and pepper. Add any additional seasonings as desired.
Lightly hand mix
Form into 6-8 round patties
Cook patties in bacon fat over medium to medium heat (not too hot!) about 4-5 minutes per side, or just until tender and light golden brown
Set aside patties
Step Three – Fry or Scramble Eggs for Each Slider
Step Four – Build Sliders
Start with one hash brown pattie
Add a layer of guacamole or avocado slices
Top with bacon
Add a fried or scrambled egg
Top with another hash brown pattie

Crunchy Parmesan Cauliflower Bites


1/2 head of cauliflower, cut into bite sized florets
1 1/2 cups panko bread crumbs (Kikkoman brand preferred for even baking)
3/4 cup finely ground Parmesan cheese (I used shredded Parmesan cheese and put it through a food processor until the crumbs were the same size as the panko bread crumbs)
2 large eggs, whisked
marinara sauce for dipping
1 tbsp fresh parsley, finely chopped (optional, for garnish)


1. Preheat oven to 400F. Add panko and cheese to a large bowl and then mix together until thoroughly combined. Dip cauliflower pieces in egg and then roll in bread crumb mixture until fully coated and place on a baking sheet lined with parchment paper. You may need to press on the coating to help get it to stick to the cauliflower bites. Repeat until all cauliflower is coated.
2. Bake for about 20-25 minutes until coating is a dark golden brown and crunchy. Serve with marinara sauce.

Whole Grain Chicken Pot Pie Recipe


cooking spray
2 cups whole wheat flour
4 tsp baking powder
4 Tbsp cold butter 
1 Tbsp dried parsley
1 cup skim milk
1 tsp olive oil
2 carrots, diced
2 celery stalks, diced
1 large onion, diced
8 oz sliced mushrooms
12 oz cooked chicken, chopped
2 Tbsp flour
1 1/2 cups skim milk
1/4 tsp salt
1/2 tsp ground black pepper


Preheat the oven to 375 degrees F. Coat a 9x13-inch baking dish with cooking spray and set aside.
In a large bowl, sift together the whole wheat flour and baking powder. Cut in the butter and then add the parsley and milk, and gently stir to combine. Refrigerate until needed.
Add the olive oil and a generous amount of cooking spray to a large nonstick sauté pan over medium-high heat. Add the carrots, celery, onion and mushrooms. Sauté for 10 minutes or until the vegetables are soft but not mushy.
Stir in the cooked chicken.
In a small bowl, whisk together the flour, skim milk, salt and ground black pepper. Add to the vegetable mixture and bring to a boil. Reduce to a simmer for 2 minutes. Remove from heat.
Pour the chicken and vegetable mixture into the baking dish. Drop clumps of the whole wheat crust mixture on top of the chicken and vegetable mixture (the topping will be very sticky). Use a spoon to gently spread the topping.
Bake for 20 minutes and serve.

I have to admit I never liked Rye Bread. Tried it many times and still the same reaction ICKY! However, my husband loves it, so I came across this recipe and decided that perhaps if I made it myself I might actually like it. I have to say I do like it now, but just when I make it and just this recipe. Give it a try and tell me what you think.

Light Rye Bread 


Makes 2 loaves

2 (1/4 ounce) packages active dry yeast
3⁄4 cup warm water (105 F-115 F)
1⁄4 cup honey
1⁄4 cup light molasses (I have used dark, or black strap)
2 teaspoons salt
2 tablespoons margarine
2 tablespoons caraway seeds
1 cup boiling water
2 cups rye flour
3 1⁄2-4 cups all-purpose flour

Mix the honey and the warm water, add the yeast in stir until dissolved.
In separate bowl mix together molasses, salt, butter, caraway, and boiling water. stir until dissolved together. Cool a few minutes till lukewarm.
Add yeast mixture to the molasses mixture.
Mix in rye flour and 1 cup all-purpose flour. Mix until well blended.
Mix in remaining flour 1/2 cup at a time until dough is firm and sticks together.
Knead 5-10 minutes until ball is smooth.
Place in greased bowl, turning dough so that greased side is up. Cover with towel or cloth and let rise in warm place away from drafts about 1 hour or until double in bulk.
Punch down and divide in half. Roll out one half with a rolling pin, then roll up dough tightly to form a loaf. Pinch under ends and place in greased loaf pan. Repeat for other half.
Cover with cloth and let rise 35-60 minutes or until double in bulk.
Bake 350 F for 30-45 minutes. Cover with foil last 15 minutes of baking if loves brown too fast. Loaves are done when they sound hollow when tapped. Rub butter over loaves as soon as removing from oven if desired.
